You’ve had a remarkable journey through the restaurant industry. Can you start by telling us how it all began for you?
Jim Bitticks: Absolutely. My journey in the restaurant industry began quite by accident. I started working at a Jack in the Box in Tempe, Arizona, when I was just 15, initially to earn some pocket money. It was supposed to be a simple job, but it quickly grew into much more as I moved up the ranks.
Many teenagers work in restaurants for extra cash, but you turned it into a career. What was the turning point that made you decide to stay in the industry?
Jim Bitticks: The turning point for me was realizing the potential to make more money through promotions. By the time I was 18, I was ready to move out, and taking on more responsibility seemed like a natural step to increase my earnings, which eventually cemented my career path in the restaurant industry.
You’ve worked at various well-known brands. How did your role evolve over the years in these companies?
Jim Bitticks: Over the years, my roles have evolved significantly. I went from an hourly shift lead at Jack in the Box to eventually becoming Vice President of Operations at CKE Restaurants, and later on, taking pivotal roles at companies like Blaze Pizza and now Dave’s Hot Chicken.
Can you share a bit about what it was like to be part of the growth journey at Blaze Pizza?
Jim Bitticks: Joining Blaze Pizza was a phenomenal experience. I came in when there were just two locations and was part of scaling it to 372 outlets. It was a whirlwind of creating systems, training, and expansion that was both challenging and rewarding.
What inspired the move to Dave’s Hot Chicken?
Jim Bitticks: The move to Dave’s Hot Chicken was inspired by several factors, including the desire for new challenges and the opportunity to work with Bill Phelps again, who I knew from Blaze. It felt like the right move to help another brand grow exponentially.
How has your approach to operations influenced the success of the restaurants you’ve worked with?
Jim Bitticks: My approach has always been deeply people-focused. I believe in creating systems that empower employees and enhance operational efficiency, which in turn elevates customer service and drives the brand forward.
